
Roasted Asparagus “Esquites”

Ingredients
Asparagus
1lb Asparagus
2T Olive oil
¼ tsp Salt
¼ tsp Black Pepper
Lime Aioli
2 egg yolks
1 tsp Dijon mustard
2 limes
¼ tsp Salt to taste
¼ tsp Espelette pepper
1 ½ cup of vegetable oil
METHOD
For Asparagus
– Cut the wood ends of the asparagus.
– Drizzle with olive oil and season with salt and pepper.
– Arrange asparagus in a single layer on a baking sheet and roast for 8 minutes.
For Lime Aioli
– Place all ingredients except the oil in a food processor, mix together.
– Start adding the oil slowly, the aioli is ready once all the oil has been mixed.
– Tast and add seasoning as desired.
Plating
place the asparagus on a plat smear some of the aioli under the asparagus, sprinkle parmesan cheese and a little bit of tajin or any chili powder.
