2 tablespoons Nori powder
2 teaspoons instant coffee
1 tablespoon Garam Masala
½ teaspoon chili crunch
1/8 teaspoon cayenne pepper
2 teaspoons agave nectar
Few drops liquid smoke
¼ cup Olive oil
1 large head of cauliflower, leaves removed and cut in half
1 ½ cups red wine, reduced to a syrup
1 ½ tablespoons unsalted butter
1 ½ tablespoons all-purpose flour
1 cup whole milk
Kosher salt
Freshly grated nutmeg, to taste
2 ounces finely grated Gruyère cheese
On a warm plate, spread a generous amount of Red Wine Mornay Sauce. Place the Nori and Porcini Roasted Cauliflower on top. Serve immediately with a glass of Zephyr.
