2 whole duck legs
1 cup Kosher Salt
2 cloves garlic, smashed and rough chopped
½ large shallot, coarsely chopped
1 tablespoon cracked black pepper
¼ cup rough chopped parsley
1 quart rendered duck fat
– Found in the freezer section in most nice grocery stores, if you can’t find it ask the butchers, most places that carry duck also carry the fat. You can also order it online, I like Allen Brothers online store
5 cloves crushed garlic
5 sprigs thyme
1 sprig rosemary
2 ½ cups cold mashed potatoes (see below)
1 cup (or two legs worth) shredded duck confit
11 whole eggs
1 egg yolk
¼ cup parmesan, finely grated
¼ cup parsley, finely chopped
2 bunches chives, finely chopped
1 teaspoon Dijon mustard
2 ½ cups panko breadcrumbs
Salt and pepper to taste
2 cups all purpose flour
1 large yukon gold potato peeled, cut into 1 inch chunks
3 large russet potatoes peeled, and cut into 1” chunks

1¼ sticks (½ cup), unsalted butter
1 cup heavy cream
2 tablespoons kosher salt
2 cups of summer squash medium dice
-I like gold bar zucchini for this but any summer squash or mix of squashes will work
2 large shallots, small dice
½ medium red bell pepper, diced
4–5 medium Nantes carrots, sliced
– any carrots will work here but I love the flavor of the Nantes and they’re usually available in the summer and fall
1 cup cherry tomatoes, quartered
1 tablespoon garlic sliced thinly
¼ cup dry white wine
2 tablespoons butter
2 tablespoons chopped parsley
1 whole duck carcass, bones only, no meat broken in half lengthwise
-sub for chicken bones if you cannot find duck
2 yellow onions, peeled and cut in ¼
1 bay leaf
1 sprig rosemary
2 jumbo carrots, rough chop
2 quarts chicken stock
On a warm plate, spread a generous amount of Summer Squash Ragout. Place the Duck Croquette on top and finish with the duck jus. Serve immediately with a glass of Zephyr.
