2 tablespoons butter
1 medium leek, white part only, coarsely chopped
1 medium fennel bulb, coarsely chopped
½ cup onion, coarsely chopped
1 stalk celery, coarsely chopped
2 cloves garlic, thinly sliced
3 cups peeled, coarsely chopped celery root
3 cups chicken broth
¼ cup cream
Salt and white pepper
2 tablespoons sliced tarragon for garnish
2 lemons, sliced
1 onion peeled and quartered
9 garlic cloves smashed
2 teaspoons coriander seeds
3 tablespoons kosher salt
4 quarts water
1 pound 16-20 count shrimp, peeled and deveined
½ cup extra virgin olive oil
½ cup olive oil
¼ cup champagne vinegar
½ bunch tarragon, bruised (use a back of knife to bruise tarragon stems and leaves)
2 tablespoon whole black peppercorns
In individual bowls, spoon the bisque and garnish with pickled shrimp and tarragon. Serve with a chilled glass if Chardonnay!
