⅔ cup lemon juice (not Meyer lemons)
2 ½ cups canola oil (oil in marinade helps to season/ penetrate proteins)
2 pounds or so beef tri tip
1 cup Moroccan couscous
2 teaspoons kosher salt, divided
¼ cup plus 1 teaspoon olive oil, divided
2 tablespoons lemon juice
1 tablespoon whole grain mustard
2 garlic clove, minced
1-pint multi-colored cherry tomatoes, halved
1 English cucumber, sliced and quartered
⅓ cup chopped kalamata olives
⅓ cup toasted sliced almonds
⅓ cup thinly sliced green onion
⅓ cup chopped Italian parsley
