1 sweet onion, julienne
6oz sliced prosciutto
½ cup brown sugar
¼ cup champagne vinegar

8oz Laurel Chanel goat cheese
⅓ cup heavy cream

6 cups assorted melon, cut into bite-sized cubes or melon balls (watermelon, cantaloupe, honeydew, or a combination)
¼ cup yuzu juice
½ teaspoon red yuzu kosho
¼ cup champagne vinegar
3 tablespoons honey
½ cup olive oil

1 carton of Strawberries

3 cups cubed watermelon
¾ cup strawberries
3 tablespoons sugar
2 tablespoons yuzu juice
4–6 makrut lime leaves
1½ teaspoons agar agar powder
2 cups basil leaves, lightly packed
¾ cup canola or a light olive oil
On individual plates or your favorite serving platter, spread a generous amount of Whipped Chevre with a drizzle of Basil oil. Place the Yuzu Marinated Melon on top. Garnish with a spoonful of Pickled Strawberry and Prosciutto Jam, dolloped with Watermelon Gelee on the side. Serve immediately with a chilled glass of Lily Fleur Rose.
